While driving the backroads on my way to Memphis, Tennessee, I find myself doing a double-take. In the middle of nowhere, I notice a new restaurant is in the process of going up. That's strange, it's a Mexican restaurant. When I think of Tennesseans and their food, I immediately think of traditional southern fried cooking. Well, it seems the owners of this up-and-coming establishment have looked far, far to the south for their southern cooking.

We've got a little bit of Cancun in Tennessee going on here. Hey! I see the lot next to it is for sale. So, what's next? Maybe a neighboring Synagogue? How about a Fine Arts Museum? Or perhaps a doily factory?

Hey, it could happen.
